Chicken Tetrazzini

I have made a lot of tetrazzini in my years but this recipe I believe is one of the best.  I really liked the chardonnay in it.  This is NOT for the person on a diet.  We paired it with watermelon.  Figured it would cancel each out for calories - right??

1 stick butter 
1/2 cup flour
2 cups heavy whipping cream
1 (14 oz can) chicken broth
1/3 cup chardonnay
1 Tablespoon chicken granules
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon pepper
3 cups cooked chicken breasts, shredded
8 ounces spaghetti, cooked and drained
1/2 cup shredded Parmesan cheese
1 small can mushrooms or fresh  mushrooms - to your tasting

2 T butter
1/2 cup panko crumbs
1/4 teaspoon salt

Preheat oven to 325.  Melt 1 stick of butter in a large pot over medium-high heat.   Whisk in the flour until blended and cook for 1 minute, whisking constantly.  Stir in cream, broth, wine, and seasonings and bring to a boil.  Lower the heat and cook for 7-8 minutes or until thick and bubbly, whisking constantly.   Remove from heat and stir in chicken, pasta, mushrooms and cheese.   Spoon mixture into a greased 13x9 baking dish.  Melt 2 tablespoons of butter in a skillet and stir in panko crumbs until they start to brown.  Remove from heat, stir in salt and sprinkle crumb mixture over the top of the chicken mixture.  Bake for 20 minutes.  Let stand 5 to 10 minutes before serving.

Creamy Chicken Hotdish

If you are from Minnesota you call it hot dish.  If you are from Iowa you call it a Casserole. Well since I am an official Minnesotan I am going to call this hot dish.  This is a good hot dish when you need to feed a lot of people.  It goes a long way.  Serve this with peas and some buns from scratch and you have the ultimate comfort food. 

1/2 cup chopped onion
1/4 cup butter
1 (12 oz) cooked and drained egg noodles
2 (10 oz) cans cream of chicken soup - undiluted
1 (14.5 ) can chicken broth - or homemade - whatever you like
1 cup sour cream
2 cooked chicken breasts shredded or cubed - what ever you prefer
2 cups shredded cheese
36 Ritz crackers
1/4 cup melted butter


  1. Preheat oven to 350.
  2. In a large pot over med-high heat, saute onions in butter until onions are tender.
  3. Add in cream of chicken soup, sour cream and cheese; gradually stir in broth.
  4. Cook over medium heat until cheese melts; stir in chicken and egg noodles; taste and adjust seasoning with salt and pepper.
  5. Transfer mixture to a greased 2 ½ quart casserole.
  6. Crush up Ritz crackers and add melted butter.  Sprinkle cracker crumbs over hot dish.
  7. Bake in a preheated oven for 30-35 minutes or until heated through and golden brown.

Creamy Chicken and Noodles

I love any chicken and noodles.  So when I seen this recipe I instantly knew I would have to try it.  I tried it when my sister came to visit and she thought it was good so I knew it was a keeper. 

Ingredients:

1 (0.6 oz) envelope Italian dressing mix
1 (8.0 oz) package wide egg noodle
2 Tbsp butter, softened
3 cups cooked chicken
1 cup whipping cream or evaporated milk
1/4 cup fresh grated Parmesan cheese

Directions:
 
Cook noodles according to package directions; drain well, and return noodles to pan.
 
Stir in the 2 Tbsp butter and toss to coat.  Stir in chopped chicken, milk, cheese, and the dressing mix.  Cook mixture over medium high heat, tossing to coat evenly approximately 5 minutes or until thoroughly heated.  Serve immediately.

Sausage and Creamy Tomato Pasta

This recipe makes a lot so make sure you invite all your neighbors over.  Also have copies of this recipe ready cause it is so good!!

Ingredients:

1 lb Italian sausage cooked and drained
1 cup chopped onion
3 gloves garlic, minced
1 (16 oz) can Italian style diced tomatoes
1 (8 oz) can tomato sauce
1 cup heavy cream
5-6 leaves of fresh basil chopped (I sometimes omit this and it still tastes great)
12 oz penne pasta (Get a 16 ounce box and use 3/4 of it)
Grated Parmesan for Topping

Directions:

Cook the pasta in salted water al dente.

While pasta is cooking, cook the Italian sausage.

Add the onions and garlic to the sausage and saute for a few minutes.

Pour the entire can of diced tomatoes and the tomato sauce and heat through.

Pour in the cream and heat through.  The longer you cook the sauce the thicker it will get so simmer until it is the consistency you want.

Add the fresh basil and let is simmer for a few minutes.

Finally mix the sauce, with the pasta and serve.  Top each serving with a sprinkle of Parmesan cheese.
