Peanut Butter Chocolate Lasagna

When I finally got around to making this the company no longer makes Nutter Butter in 16 oz packages.  So you will kinda have to play around a bit with the measurements of butter and cookies. Keep refrigerated and covered and should keep a few days.  But I bet it won't last that long.

Ingredients:

  • 1 16-ounce package peanut butter sandwich cookies, divided
  • 4 tablespoons butter (1/2 stick) butter, melted
  • 4 ounces cream cheese, room temperature
  • 1/2 cup confectioners’ sugar
  • 1/3 cup creamy peanut butter
  • 1 8-ounce container Cool Whip, divided
  • 1 3.9-ounce package instant chocolate Jello-O Pudding Mix
  • 1 1/2 cups milk

Instructions:

  1. Preheat the oven to 350 degrees F.
  2. In a blender or food processor, finely crush 20 of the cookies.
  3. In a medium bowl, mix together the melted butter and finely crushed cookies until well moistened.
  4. Press into an ungreased 8 X 8-inch baking dish.
  5. Bake for 10 minutes.
  6. Allow crust to cool completely before proceeding.
  7. In the meantime, mix the package of pudding with the 1 1/2 cups of milk in a small bowl.
  8. In a mixing bowl, beat cream cheese, confectioners’ sugar, and peanut butter together.
  9. Fold in 1 cup of the Cool Whip and mix until well blended.
  10. Spread the chocolate pudding over the cooled crust.
  11. Place dollops of cream cheese mixture over the pudding layer and with an offset spatula, gently spread to completely cover.
  12. Spread remaining Cool Whip over the cream cheese.
  13. Refrigerate two hours. Place into freezer for a half hour to completely set and allow for neat slices.
  14. In a plastic bag, break up the remaining cookies.
  15. Sprinkle cookies on top right before serving.

Pulled Pork Sandwiches

2 1/2 to 3 lb Boneless pork sirloin roast
1/2 tsp Salt
1/2 tsp Black Pepper
1 Tbsp Vegetable oil
2 medium Onions, cut into thin wedges
1 cup Root Beer
2 Tbsp Minced garlic
3 cups Root beer (two 12 ounce cans)
1 cup bottled Chili sauce
1/4 tsp Root beer concentrate (optional)
6-8 dashes hot pepper sauce


Trim fat from pork roast, if necessary.  Cut meat to fit into slow cooker.  Sprinkle with salt and pepper.  In a large skillet, brown the pork roast on all sides in hot oil.  Drain off fat.  Transfer meat to slow cooker.   Add onions, 1 cup root beer and the garlic.  Cover and cook the mixture on low heat setting for 8-10 hours or on high heat setting for 4 to 5 hours. 
Meanwhile, for sauce: in a medium saucepan, combine the 3 cups root beer and the chili sauce.  Bring to boiling, reduce heat.  Boil gently, uncovered about 30 minutes or until mixture is reduced to 2 cups, stirring occasionally.  If you like, stir in root beer concentrate and hot pepper sauce.
Remove the meat and onions from the cooker with a slotted spoon.  Discard cooking liquid.  Using two forks, pull meat apart for shredding.  Serve on your favorite bun.

Bar-B-Que Baked Beans

I loved Baked Beans.  Especially with brown sugar!! I haven't tried these but plan on trying them the first time we smoke some ribs.  Love the summer time!!


1 can (28oz) pork and beans
2 Tbsp chopped onion
1/4 cup packed dark brown sugar
1/2 cup sweet hickory barbecue sauce or favorite barbecue sauce
4 slices bacon, cooked and crumbled

Heat for 10-15 minutes, covered, stirring occasionally, until beans come to a boil.  Turn temperature down and let beans simmer until ready to serve.

Dry rub for Ribs

We love to smoke ribs and brisket.  Our favorite is ribs.  Usually we just buy rub but I think I am going to try this on Mothers Day when we are going to smoke ribs again.  I will let you know what we think!! This would be easy to make up a big batch and than just use as needed.  If it is as good as it looks we just might have to do that!!

1/4 cup packed brown sugar
1 to 3 Tablespoons salt
1 Tablespoon chili powder
1 Tablespoon black pepper
1/2 teaspoon ground allspice
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon celery salt
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cumin

Mix all together and rub onto meat.

Bar-B-Que Baked Beans

1 can (28 oz) Pork and Beans

1/4 cup packed brown sugar
1/2 cup Sweet Hickory BBQ sauce

Heat on stove top till heated through or put into oven at 325 for 30 minutes or until desired thickness of sauce.
